Rich Indian Lamb Curry: Tender Meat with Basmati Rice and Naan

Prep time: 20 mins | Cook time: 1 hr 45 mins | Servings: 4–6

Ingredients

Lamb & Marinade

  • 2 lbs (900g) boneless lamb shoulder or leg, trimmed and cut into 1.5-inch chunks

  • 1/2 cup plain whole-milk yogurt

  • 1 tbsp ginger-garlic paste

  • 1 tsp ground turmeric

  • 1 tsp Kashmiri chili powder (or mild paprika)

  • 1 tsp fine sea salt

Curry Base & Whole Spices

  • 3 tbsp ghee or neutral cooking oil

  • 1 large yellow onion, very finely diced

  • 1 cinnamon stick

  • 4 green cardamom pods, lightly crushed

  • 1 black cardamom pod

  • 4 whole cloves

  • 1 bay leaf

  • 1 tbsp grated fresh ginger

  • 1 tbsp minced garlic

  • 1 tsp ground cumin

  • 1.5 tbsp ground coriander

  • 1/2 tsp red chili flakes or cayenne (adjust to taste)

  • 1 cup crushed canned tomatoes or smooth tomato purée

  • 1.5 cups low-sodium beef or lamb stock (or warm water)

  • 1 tsp garam masala

  • 1/4 cup heavy cream (for finishing)

  • Fresh cilantro, finely chopped

For Serving

  • Steamed long-grain basmati rice

  • Warm, charred garlic naan bread

Instructions

  1. Marinate: Combine the lamb pieces, yogurt, ginger-garlic paste, turmeric, Kashmiri chili, and salt in a bowl. Toss thoroughly to coat. Let sit at room temperature for 30 minutes, or refrigerate covered for up to 12 hours.

  2. Temper the Aromatics: Heat ghee in a heavy-bottomed Dutch oven or pot over medium-high heat. Add the cinnamon stick, green cardamom, black cardamom, cloves, and bay leaf. Sizzle for 30 to 45 seconds until fragrant.

  3. Brown the Onions: Add the finely diced onions. Cook over medium heat for 12 to 15 minutes, stirring frequently, until they turn a deep golden-brown. Stir in the minced garlic and fresh ginger, cooking for another minute until the raw edge mellows.

  4. Bloom the Spices: Reduce heat to medium-low. Add the ground cumin, coriander, and cayenne. Stir continuously for 30 seconds to lightly toast the spices without scorching them.

  5. Sear the Meat: Turn the heat up to medium-high. Add the marinated lamb along with all the marinade juices. Sear the meat for 6 to 8 minutes, stirring often, until the exterior changes color and the oil begins to separate slightly around the edges.

  6. Simmer Low & Slow: Pour in the crushed tomatoes and stock. Bring the pot to a gentle boil, scraping up any browned bits stuck to the bottom. Lower the heat to low, cover with a tight-fitting lid, and let it simmer gently for 1 hour and 15 minutes to 1 hour and 30 minutes, stirring occasionally, until the lamb is meltingly tender.

  7. Finish: Uncover and raise the heat slightly if you prefer a thicker gravy. Stir in the garam masala and simmer for another 3 minutes. Remove from heat and drizzle the heavy cream across the top in a gentle swirl.

  8. Serve: Garnish generously with freshly chopped cilantro. Spoon the curry into wide bowls alongside fluffy steamed basmati rice and a folded piece of warm, blistered garlic naan.
